My wife bought one of these on a trip to France. It is basic, and it works perfectly, every time. I use an infrared thermometer to set the heat just right. It heats up fairly quickly, the big cast iron griddle takes awhile of course, but it also maintains very even heat. Seasoning was a snap with their tutorial. We got ours with a propane orifice and converted it to natural gas, but I look forward to taking it "on the road" with a propane tank in the future. This is a production machine and well worth the price, it will last forever.
